Sweet Potato Pancakes Ingredients

  • 1 cup cooked cubed sweet potato
  • 1¼ cups packed golden brown sugar
  • 3 eggs
  • 1½ cups nonfat milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons canola oil
  • 1¼ cups all-purpose flour
  • 1 cup whole wheat flour
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons baking powder

How Do You Make Sweet Potato Pancakes: Step By Step

  • Combine the sweet potato and brown sugar in a bowl and beat with an electric mixer until well blended.
  • Add the eggs, one at a time, beating well after each addition. Stir in the milk, vanilla extract, and canola oil. Mix until well blended.
  • In a separate bowl, combine the all-purpose and whole wheat flours. Whisk together with the cinnamon, nutmeg, and baking powder.
  • Gradually stir the dry ingredients into the sweet potato mixture, mixing well. The batter may still be a bit lumpy.
  • Coat a nonstick skillet with cooking spray. Pour 3 ladles of batter for 3pancakes. Cook until bubbles form on the top of each pancake, and the bottom is golden brown.
