Chocolate Chip Crumb Cakes Ingredients

  • ½ pound (2 sticks) unsalted butter, softened
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon extract
  • 1 cup cake flour
  • 1 cup cornstarch
  • ½ teaspoon baking powder
  • 1 cup semisweet chocolate chips
  • Crumb Topping:
  • ½ cup cake flour
  • ¼ cup sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons unsalted butter, cut into pieces

How Do You Make Chocolate Chip Crumb Cakes: Step By Step

  • Preheat the oven to 350°F. Lightlygrease and flour three 3 by 5-inch mini loaf pans.
  • To make the cakes, cream the butter with the sugar with an electric mixer untillight and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanillaextract and lemon extract.
  • Whisk together the flour, cornstarch, and baking powder. Gradually add thedry ingredients to the butter-and-sugar mixture. When the flour has beenthoroughly blended in, fold in the chocolate chips.
  • Spoon equal portions of the batter into the prepared loaf pans.
  • To make the crumb topping, whisk together the flour, sugar, and vanillaextract. Use a fork to cut in the pieces of butter. Mix until the mixtureresembles coarse meal.
  • Sprinkle equal portions of the crumb topping over each cake and bake the cakesfor 35 to 40 minutes, until a toothpick inserted in the center of the cake comesout clean.
  • Let the cakes cool in the pans before unmolding.
